In the cheese sector supplying the right type, age and quantity of a product is some what more complicated than with most other foodstuffs. One of the reasons for this is, for example, that cheese reduces while it is being kept. The sales department needs accurate records of the age of the cheeses in order to function optimally. The age does not just influence its weight; it also plays an important role in the cost price calculation. An older cheese has been turned and coated more frequently which increases the cost price.
